Like fine wine and Jennifer Aniston, Swiss cheese has a well-established reputation for getting better with age. But what conditions make a run of the mill wheel of cheese ripen into a flavorful delicacy to be paired with wine at a dinner party? Well, as it turns out, funky beats and a few clever rhymes help do the trick.

Last September, Swiss cheesemaker Beat Wampfler posed the question “what type of music would help age this cheese most gracefully?” Being the implementer he is, Beat got together with associates at The Bern University of Arts to test his theory that different musical genres would have an impact on cheese maturation. After placing nine individual wheels of Emmental into wooden crates and assigning them each their own unique track- some of which included Monolith, by Yello, Mozart’s Magic Flute, and the legendary Stairway to Heaven by Led Zeppelin. The song that proved most fruitful at aging cheese, however, was We Got It From Here, by the legendary hip-hop group A Tribe Called Quest.

After being judged by a panel of jurors, it was found that A Tribe Called Quest’s hit proved to be the optimal choice for aging cheese. With this crucial information in mind, consider adding some songs from the group to your playlist at your next dinner party.
